6 to 8 Ib. medlars, ripe and soft
1 Ib. chopped raisins
2 1/2 lb. sugar
Campden tablet
Pectozyme
Nutrient
Sauterne yeast
Wash and crush the medlars, add the chopped raisins and pour on boiling water. When cool add the Campden tablet and a teaspoonful of pectozyme and cover. Stir thoroughly each day for five days and keep the must closely covered at all times, then strain but do not press the fruit. Stir in the sugar, nutrient, yeast, and ferment as usual.
