9 to 10 lb. Cypriot seedless grapes

These grapes are usually plentifully available in late July and August and your greengrocer may be willing to let you have some of the loose grapes cheaper than the displayed price per pound. Pick the grapes over carefully to remove any with green mould upon them and take out the stalks. Rinse the grapes to remove dirt and dust and then crush them with your hands, making sure to break each grape, pour off the juice and press out as much juice from the pulp as you can. Add Camden tablet to this pure grape juice and cork the jar for a couple of days. Put the remaining pulp into a mashing vessel and pour on three pints of boiling water, stir thoroughly and leave for two days, then strain and press dry. Add this liquor to the grape juice, stir in the fermenting yeast after first checking the S.G. If it is a little below 1.080 add a little sugar to make up, on the basis that a 1/4 lb. sugar will be about nine points.

Naturally grape juice takes equally well. to an;; of the varieties of yeast flavour and the author has very successfully used most of them at one time or another. To get the very a best from this wine, however, it would be improved if a mixture of other grapes could be added at the mashing.
