6 Ib. mixed cherries, eating and cooking varieties, both red white
1 gallon water
Campden tablet
4 oz, sultanas or raisins
2 1/2 Ib sugar
Pectozyme
Nutrient
Pommard or Burgundy yeast
Stalk and wash the cherries and pour boiling water on to them. When cool mash the fruit with your hands and if possible remove the stones. Add the chopped raisins or sultanas, a Campden tablet and a teaspoonful of pectozyme. Cover and next day stir in the sugar, nutrient and active yeast. Ferment for four days, then strain and press and continue fermentation to dryness.
