4 Ib. young blackberry shoots
1 Ib. raisins
2 1/4 Ib. sugar
1 gallon water
Rind and juice of I large or 2 small lemons
Nutrient
Pommard yeast
Chop up the bramble shoots and boil them in water for thirty minutes, then strain on to the chopped raisins, lemon rind and sugar. Stir well and when cool add the lemon juice, nutrient and yeast. Ferment for four days, then strain and press and continue fermentation.
