8 oz. dried bilberries
4 oz. chopped raisins
2 1/4 Ib. sugar
Rind and juice 1 lemon
I gallon water
Nutrient tablet
Campden tablet
Pectozyme
Burgundy yeast
Place the bilberries and chopped raisins in a mashing vessel and pour the boiling water over them. When cool add the rind and juice of the lemon, one teaspoonful of pectozyme and one Campden tablet. Next day add the nutrient tablet and fermenting yeast and ferment on the pulp for four days, pressing down the cap each day. Then strain and press, stir in the sugar and continue fermentation. When well made and matured this makes a splendid fruity red table wine.
